Pumpkin Chili

Ingredients:

2 T olive oil
2 yellow onions
chopped
5 cloves of garlic
coarsely chopped
2 T chile powder
4 t purmpkin pie spice
3 cans black beans
drained and rinsed
1-1/2 t salt
2 cups veg broth
14.5 ounce can diced tomatoes
1 cup canned pumpkin puree2 T tomato paste
3 T maple syrup
1 pie pumpkin
peeled and cu bed or 2 cups butternut squash
peeled and cubed
2 bunches swiss chrd
stems removed
coarsely chopped
Sour cream to garnish (fat free)

Preparation:

In a large pot, set over medium low heat, heat oil, saute chopped onion and garlic until golden - abou 8 minutes

Stir in chili powder, pumpkin pie spice, beans, salt, broth, tomatoes, pumpki puree, tomato pate, maple syrup and cubed pumpkin.  Simmer ove rmedium heat until pumpkin is tencer, about 30 minutes.

Add swiss chard and cook 5 minutes more.  Serve chili topped with a dollop of sour cream
