Low Carb Chicken Lettuce Wraps I
Ingredients:
Wraps:
1 lb ground chicken or turkey
8 scallions
white and green part
chopped
1 8 oz. can water chestnuts
drained
rinsed and chopped fine
1 red bell pepper
chopped fine
1/4 cup reduced sodeium soy sauce
2-1/2 T hoison sauce
1 T ginger (from a jar) or fresh grated
1 T water2
t sesame oil
1 large head butter lettuce
washed
dried
leaves separated
Dipping sauce:
1/4 cup reduced sodium soy sauce
2 T seasoned rice vinegar
1 t sugar
1/2 t ginger (from a jar or fresh minced)
1 t seasame oil
1/2 t minced garlic
Preparation:
In a large pan, brown the ground chicken over medium-hiugh heat, breaking up the pices. Pour into a colnder and let drain fat. Return chicken to the pan. When cool enough to handle, break up the chicken pices until minced.
Add the scallions, water chestnuts, red pepper, soy sauce, hoisin sauce, ginger, water and sesame oil Cook for a few minutes until the scallions and red pepper ar soft. Keep warm.
In a small bowl, add all the dipping sauce ingredients and mix well.
To Assemble each chicken wrap: Spoon about 1/3 cup of filling onto once lettuce leaf and roll it up if desired. Serve with dipping sauce on the side; about 1 teaspon per wrap as it is strong.
