Salmon with Fruit Salsa

Ingredients:

1 cup diced fresh pineapple24 ounces slamong filet1 T olive oilFruit Salsa:2 T fresh lemon juice1 medium bananna
diced1 T apricot jam or orange marmalade1/3 minced red onion1/4 tsp hot pepper flakes 2 T coconut flakes (optional)

Preparation:

Prepare salmon any way you wish; brush with olive oil, add pepper, and grill, microwave or bake the fish until it is cooked to your desired degree, then serve with a dollop of fruit salsa.Fruit salsa: Combine the ingredients. I ran it through a blender to make it easier to work with.  You can use apricot jam if you prefer it over orange marmalade.
