Mom's Potato Salad
Ingredients:
10 medium red potatoes
4 hard boiled eggs
grated
2 hard boiled eggs
sliced (for garnish)
2 8 oz. packages Italian dressing mix
1 c chopped celery
1 can sliced olives
1 c diced bread & butter pickles
1/2 - 3/4 c mayonnaise
1-2 T mustard
1 c chopped green onions
Pickle juice to taste
1 tomato
sliced (for garnish)
Preparation:
For best results, begin preparation 2 days ahead of time. Boil the potatoes and eggs.
While the potatoes are slightly warm, peel them but leave the peel on.
Dice the potatoes and put in a large ziploc bag.
Mix the Italian dressing, but leave out the water. Pour the dressing into the bag and mix.
Marinade the potatoes overnight.
The next day, mix all of the ingredients with the grated, hard-boiled eggs. Add some of the pickle juice to taste.
Let sit another day - the flavors really meld by waiting that extra day.
Garnish with sliced eggs and tomato slices when serving.
