Ginger Carrot Soup

This is delicious and high in anti-oxidants.


1 T Olive Oil
2 cups Yellow Onion chopped
1 lb Carrot cut in chunks
2 cups Chicken Boilion
2 T Crystallized Ginger

1 t Ground Cinnamon
1/2 cup Orange Juice
1/2 cup Half n Half
1 T Fresh Chives Chopped


In a large pot, saute onions in olive oil until soft. Add carrots, broth, ginger and cinnamon. Simmer until carrots are thoroughly cooked, 30-40 minutes. Transfer to a blender or food processor and process until smooth. Stir in juice and half and haf. This may be served warm or chilled garnished with snippets of chives.
