This is tangy and unusual. Serve Ginger Carrot Soup as a side dish, Spinach with garlic on the side, and some mashed sweet potatoes.


2 Fillets Salmon
1 Cup Pineapple Chunks
1 T Olive Oil
2 T Lemon Juice

2 Bananna diced
1 T Orange Marmalade
1/3 Cup Red Onion Minced
1/4 t Cayene Pepper Flakes


Prepare salmon any way you wish; brush with olive oil, add pepper, and grill, microwave or bake the fish until it is cooked to your desired degree, then serve with a dollop of fruit salsa.Fruit salsa: Combine the ingredients. I ran it through a blender to make it easier to work with.  You can use apricot jam if you prefer it over orange marmalade.

Makes 2 servings.
