Mashed Yam Bake

This low carb alternative to mashed potatoes is tasty!
Ingredients:
3 Yam
1 Cup Maple Syrup
1 Cube Butter
1 T Fresh Ginger Root Minced
Preparation:
Microwave whole potatoes until soft. Cool to touch. Remove pulp. Mash with liqueur/syrup and spices. Top with almonds.
Makes 4 servings.
