This is a very good side dish packed with flavor and nutrition.
2 Cups Crookneck Squash
2 Cups Zucchini
1/2 Cup Yellow Onion Diced (Can be any variety of oni
3/4 Cup Tomato Sliced
2 - 3 Garlic Clove Minced (to taste)
1/2 Cup Grated Mozzerella Cheese
Place all ingredients in a covered casserole dish. Bake at 375 for 30 minutes.
Makes 2 servings.
