Angie tailgates with us at the 49er games and brought this wonderful dish which we thought was quiche. It does not taste 'oniony' at all!
1 Yellow Onion
2 - 10 Drops Hot Sauce
1/4 Cup Butter
1 Box Jiffy Corn Muffin Mix
1 Egg Beaten
1/3 Cup Milk
1 can Cream Style Corn
1/4 t Salt
1/4 T Fresh Dill (I use more)
1 cup Shredded Sharp Cheddar Cheese
Saute onion in butter.
Combine muffin mix, egg, milk, corn and hot sauce
Place muffin mixture in buttered 8" pan
To onion/butter mixture add sour cream, salt, dill weed and 1/2c cheese.
Spread over batter.
Sprinkle with rest of cheese.
Bake 425 25-30 min or until set.
Cook covered for the first 20 mins then uncover.
Cut and serve warm. Serves 6
