Nothing like homemade Mayonnaise - it is not difficult to make at all!  Note:  The fresher the eggs the better!


1 Egg
1/2 t Salt
1/2 Dry Mustard

1/3 t Paprika
1 T White Vinegar
1 Cup Vegetable Oil


Combine egg, seasonings, vinegar and lemon juice with 1/3 cup of the oil in a blender.  Cover and process until thick.

Remove cover and gradually pour in remaining oil.  Use a rubber spatula to keep ingredients flowing in to blender blades.
