Enchilada Sauce

Why buy canned enchilada sauce? You can make it easily and it's not just for enchiladas.
Ingredients:
2 T Vegetable Oil
2 T All Purpose Flour
1/2 t Grouind Cumin
2 cups Water
1-4 t Garlic Powder
2 T Chili Powder
1 t Salt
8 oz can Tomato Sauce
Preparation:
Heat oil in large 2 qt saucepan. Stirn in flour and chili powder, cook for 1 minute, NO MORE THAN THAT. Stir constantly for best results!
Add remaining ingredients and make sure the 'fried' chili powder and flour mixture isn't lumpy.
Bring to a boil, then simmer for about 10 minutes.
Makes 6 servings.
