This hearty, spicy soup is a cure for what ails you!


6 Chicken Thighs
32 oz. Water
2 Carrot chopped
3/4 cup Yellow Onion chopped
2 stalks Celery chopped
2 cups Zucchini chopped
1/4 head Cabbage chopped

1 T Lemon Juice
1/2 T Grouind Cumin
2 T New Mexico Ground Chili
1/2 cup Fresh Cilantro
28 oz. can Stewed Tomatoes Diced
Salt to taste


Put chicken thighs and water in a large pot, boil for an hour or more, until you can pull the bones right out of the chicken thighs with tongs.

Add chicken broth, and remaining ingredients. Simmer until the zucchini is transluscent.

Makes 10 servings.
