This hearty soup is delicious and low in fat while high in nutrients.
3 large Boneless Chicken Breasts
3 - 6 T Chicken Boilion powdered
2 Red Bell Pepper chopped
6 Tomato Chopped
3 Zucchini Chopped
1 Large Red Onion Chopped
3 - 6 Garlic Clove Minced
2 T New Mexico Ground Chili
1 - 2 t Grouind Cumin
1/2 c Fresh Cilantro chopped
1 - 2 T Vegetable Oil
Boil chicken for about an hour in a large pot or until it falls apart easily. Shred with a fork - retain water it boiled in as this is your bas,
In a large saute pan or wok, heat oil. Add all of the vegetables to the pan and saute until soft, sprinkling chicken boullion and spices into mix.
Add to pot of chicken and water, bring voume of water up to fill the pot and add a few tablespoons of chicken boullion, and season to taste.
Boil for about 30 minutes and serve.
